Normal garlic: There are different types of normal garlic, which are divided into two categories: hard and soft. Soft varieties include mixed breeds, Asian, turban-like, artichoke-like (what is commonly sold in grocery stores), and silverskin. Varieties of hard garlic include Chinese, purple skin, and rocambole.

Philly garlic: This type of garlic is not really garlic, although it is from the same family as garden leeks. In this family, large onions are attached to a long flowering stem with leaves that resemble leek leaves. Garlic can be separated and used in cooking. Its taste is much less than real garlic.

Black garlic: Black garlic is newer but harder to find. This family has a dark purplish gray color and a mild flavor that is sweeter than regular garlic. Do not chop the black garlic to make it taste better.
